Drying - Introduction

Coffee beans must contain a humidity level of between 9-11% humidity for export. Since Selva Negra is located high in the mountains, it is difficult, if not impossible, to reach this level of humidity when drying the beans only at the mill Selva Negra. Therefore, we operate on a two stage drying process, one in the mountains of Selva Negra, the other in Selva Negra's drying mill in the city of Chaguitillo.
