Beans move along a conveyer belt where employees remove any beans that look less than perfect. This is a very interesting section of the coffee process since it is done usually only by women, because it requires thin hands so they can grip each bean thay they see has any flaws, and women's hands are usually thiner than men's. So ladies sit on both sides of a slowly moving conveyer looking into every bean and pulling out those they see are bad.
